How to Make Yogurt Soup Without It Curdling

There is a specific kind of comfort that only comes from a bowl of hot liquid on a rainy Tuesday. Or a hangover morning. Or just because you are tired of cooking.

Yogurt soup is that comfort. It is creamy. Tangy. Fast.

The problem? Most people try to make it. The yogurt splits. You are left with curds and whey and a sense of failure.

The Shopping List

You do not need exotic ingredients. You need pantry staples.

  • Yogurt : 1 kilogram. Use full fat if you have it. It helps with stability.
  • Water : 1.5 cups. Not too much. You want it thick.
  • Bulgur or Barley : 1 cup. The original recipe says “arpa şehriye” which translates to barley vermicelli. If you cannot find barley noodles, use regular vermicelli. Or just broken vermicelli. It works.
  • Chickpeas : Half a cup. Cooked. Canned is fine. Just rinse them.
  • Herbs : Half a bunch of mint and parsley. Fresh is better. Dried is acceptable in a pinch.
  • Toppings : Red pepper flakes. Olive oil.

The Process

Start with the noodles.

Put them in a pot. Dry roast them for a minute. You want them to smell nutty.

Add water. Cover the pot. Let them boil until soft. This takes about ten minutes. Do not skip this step. Raw noodles are crunchy. Nobody wants crunch in their soup.

While the noodles cook, get the yogurt ready.

This is the danger zone.

Take your yogurt. Add a pinch of salt. Whisk it vigorously. You need it smooth. No lumps.

Now comes the trick.

You cannot just dump the hot noodles into the cold yogurt. It will curdle. It will look like cottage cheese and taste like regret.

Cool the noodle water slightly. Or better yet, temper the yogurt.

Take a ladle of the hot noodle water. Slowly pour it into the yogurt while whisking constantly. Add more ladles. Keep whisking. The temperature of the yogurt rises. It becomes safe to mix with the hot soup.

Once the yogurt is tempered, pour it into the main pot. Stir gently.

Add the chickpeas. Toss in the chopped mint and parsley.

Turn off the heat. Or keep it on the lowest setting. Do not boil it again. Boiling breaks the emulsion.
