The Lazy Person’s Perfect Strawberry Cheesecake

8

I have baked my fair share of desserts this summer. Mandarin orange cake? Check. Viral Instagram dot cakes? Tasted. No-bake blueberry mashups? Attempted. But here is the thing: you can never have too much cake. Especially if it tastes this good and takes next to zero effort.

It Actually Tastes Like Cheesecake

Strawberry cream cheese dump cake. The name alone sounds chaotic. Like a grocery bag exploded. But the flavor? It landed exactly where I hoped. It tasted like rich, dense cheesecake, just faster.

I took this thing to a dinner party. Big mistake for my diet, great for my reputation. Everyone loved it. They called it “decadent,” which is code for please stop eating it. The strawberry pie filling provided a bright, tart contrast to the heavy cream cheese. My favorite part? The cream cheese layer itself. It had lemon zest in it. Two lemons’ worth.

I was worried that much citrus would overwhelm the cheese. It did not. The tang was perfect.

The crust was the real surprise though. You don’t add eggs. No water. No oil. Just a box of yellow cake mix mixed with melted butter.

This simple swap turned the cake into a crunchy, toasty crust.

It got a little golden-brown color in the oven. That meant toasted flavor. And best of all, that crispness survived a four-hour chill in the fridge. Most crusts get soggy. This one held its own.

How To Make It (It Is Easy)

You need three main layers. Order matters.

  1. The Bottom: Mix a box of yellow cake with melted butter. Press it firmly into the bottom of a greased baking dish. This is your base.
  2. The Middle: Beat room-temperature cream cheese with sugar, vanilla, kosher salt, and that lemon zest until smooth. Pour it over the crust.
  3. The Top: Dump a can of strawberry pie filling over the cream cheese. Spread it out evenly.

Bake for 45 minutes. Watch for bubbling filling and browned edges.

Don’t serve it hot. That would be a shame. Let it cool on the counter for 30 mins, then put it in the fridge. Wait four hours.

Eat it cold. The texture holds up. The flavors marry.

Summer is short. This dessert is fast. Why complicate things when boxed mix and butter work this well? 🍓
