You can easily do this as follows:

what do you need?

You don’t need to have a pantry full of spices. Just the basics.

5 medium-sized zucchini
1 yellow onion
* 2 red onions
* 3 country peppers (or any firm red pepper)
* 1 ripe tomato
3 garlic cloves
A handful of fresh dill
*olive oil
* Salt

How to make vegetables

Start with zucchini. Scrub the skins clean. There is no need to peel the skin unless it is very tough. Cut the ends.

Cut them open and scoop out the seeds. It can be watery or bitter. Once clean, cut it into bite-sized pieces.

Next, the aromatics. Finely chop the onions. Dice the red peppers. Finely chop the garlic.

Wash the tomatoes. Cut it up too. Leave the pieces rough. They will break down in the oven into a light sauce for zucchini.

The Assembly

Prepare a large mixing bowl. Mix the zucchini with the chopped vegetables.

Add salt. Lots of it, but taste as you go. Drizzle olive oil on top. You need enough to cover everything. Use a spatula or your hands. Mix until all parts are glossy.

Now a tip for easy cleaning: baking bags.

Put the whole mixture in a heatproof baking bag. Tie or fold the top. Place the bag on the baking tray. This prevents spills. It holds the moisture in. Steam the vegetables a little while roasting.

Cooking process

Preheat the oven to 180℃.

Place the baking sheet on the center rack. Bake for about 30-40 minutes. The vegetables should be tender when pierced with a fork. The edges may turn a little brown. That is flavor.

Remove the tray from the oven. Let it sit for a minute. Handle the bag with care. it is hot and full of steam.

Transfer the bag to a plate. Cut off the bottom corner with a knife. Pour the contents onto a plate. The juices covers the whole thing nicely.

The end

Get plenty of fresh dill. Chop it finely.

Spread generously over the warm zucchini. The heat causes the herbs to wilt and release their flavor.

Enjoy as a side dish. Or serve as a light main course with crusty bread.

It’s very simple. It’s healthy. And it is very delicious.

Try it tonight. You might just find a new weeknight dinner.
