You want something warm, filling and quick. Real food. Not for takeaway. Not complicated. Just ingredients you probably already have in your fridge.
Gözleme, made from zucchini and kashar cheese, fits this description perfectly. It uses very few items. It cooks in minutes. It tastes like comfort.
Here’s how it’s done. No fluff. Just steps.
Зміст
Ingredients
You need simple things. Nothing special.
- 2 sheets of Yufka (thin dough)
–2 zucchini - 250 grams of grated Kashar cheese (semi-hard Turkish cheese, similar to Cheddar or Gouda, but spicier)
- a quarter bunch of dill
–salt
–Red pepper flakes
–Half a tablespoon of butter
That’s it.
That’s the whole list.
How to make zucchini and kashar gözleme
Start by preparing the filling. This is the most important part. If the filling is wet, the dough gets soggy. You don’t want that.
Grate the zucchini. Grate Kashar cheese. Keep them separate for now.
Chop the dill. Finely. You want little green flecks, not big clumps.
Mix together the cheese, dill, salt and red pepper flakes. The salt will draw moisture out of the zucchini over time, but for now just combine the dry ingredients.
Shaping the Gözleme
Take a sheet of yufka. Cut it in half. You now have two rectangles.
Place four spoonfuls of the cheese mixture in the center of each rectangle. Spread it out evenly. Leave a clear border around the edges. The dough needs room to close.
Fold the edges over the filling. Press down firmly. You are making a rectangular pocket. Make sure there are no holes. Air pockets mean leaks. Leaks mean a mess on the stove.
Cooking
Prepare the pan. Medium heat. Not high. You want it to cook and not burn right away.
When the pan is hot, add the gözleme. Cook one side until golden brown. Turn it over. Fry the other side.
When both sides are crispy and golden brown, take it out.
Here’s the trick. Rub the hot surface immediately with a small amount of butter. It melts into the crust. It adds flavor. It makes it shiny.
Serve hot. Straight from the pan.
It’s simple. It’s fast. It tastes better than anything you can order.
You don’t need a chef’s knife. You don’t need a kitchen scale. Just have to watch the heat.
Is it worth the effort? Likely. There are three ingredients. Five if you count the butter.
Try it tonight. Or tomorrow. However, the dough doesn’t last forever.
